ReplyDeleteI hope that you've found some by now; but for future reference, Central Market has some (packaged sausage case to the right of the fresh seafood; $1.99 for 12 oz.), as does Spec's Warehouse (frozen meats case, $4.99 per pound).

ReplyDeleteThis year's gumbo is going to use a variant I read about in Garden and Gun magazine -- I've rendered the fat from two ducks, and am going to use duck lard to make my roux. We shall see.
